Chocolate is mainly made of cocoa mass, cocoa butter, cocoa powder, and sugar, the general content of sugar is about 50%.The sugar must be crushed into a certain fineness. Cocoa mass and cocoa butter are solid at room temperature, so before mixing with other raw materials, they must be melted. The melting can be done in a heating and melting device such as a jacket kettle or a melting tank, and the temperature of the melting is not more than 60 degree.
Chocolate conching machine is the main machine during chocolate production line, and can be used for refining and conching chocolate pastes/mass.
Chocolate Ball Milling Machine is used for ball grinding and milling chocolate pastes.Through collision and friction between the steel balls and the chocolate pastes inside the machine cylinder. lt has automatic temperature control and PLC control system. The traditional method of chocolate refining time requires 48, 72h, different types of chocolate, refining time also requires different, such as milk chocolate, the refining time is about 24h, while dark chocolate with high cocoa content takes about 48h. The refining temperature of the milk chocolate is 45, 50 degree, while the dark chocolate is 60, 70 degree.
Chocolate Storage Tank is the special storage container for conched or ball milled chocolate pastes withelectric heating and automatic temperature control. It enables the chocolate pastes being kept at a set temperature.
Chocolate Tempering Machine is the essential equipment toproduce natural cocoa butter and cocoa butter equivalent chocolate. Chocolate Thermostat curve is: The first temperature zone is 40~45℃, the second temperature zone is 32~27℃, the third temperature zone is 27~32℃. The general milk chocolate final temperature thermostat is 29~30℃; dark chocolate is 2~3℃ higher than milk chocolate. Because the fat in milk chocolate will affect the temperature thermostat, the milk fat content more, the temperature of the thermostat is lower.
Chocolate Depositing Machine can both be used for the production of single color, two colors (left and right, up and down), three colors, big portion central fling. whole nuts filing crushed nuts fling chocolateproducts, big chocolate bar and etc.
Chocolate Chips Depositing Machine is for the production of chocolate chips in small drop-shape or button shape. It can be used to deposit chocolate pastes through depositing head on the PU conveyor belt and convey the products into the cooling tunnel for cooling down and automatic shedding. It has advantages of accurate amount set, easy operation and large production capacity.
Chocolate Enrobing Machine is the dedicated equipment for making assorted chocolate products with functions of whole coating, single-sided coating, partial coating and cooling. It can enrobe chocolate pastes on many kinds of food, such as pastry, pie, biscuit, wafer, candy and etc.
